Check the State Department web site too. With the new 25% tariff on imports from Mexico starting Feb 1 and the on-going border related friction, tensions may impact the welcome offered by the locals. The State Department web site should be checked, and maybe a call to the US Embassy in Mexico is in order for a thorough assessment.

You already mentioned staying in the hotel and avoiding town, so that's at least a start on travel risk management.
I can't speak to visiting Cancun per se but have travelled to Playa del Carmen regularly for years. We were there for ten days this past January and are returning for a week at the end of February. We walk all over the area where tourists stay, eat, and relax, and have always felt safe. To put some of those crime stories in perspective, there are roughly 14 - 15 million visitors to Quintana Roo each year. We stay 90% in apartments / AirBnbs in town. Nothing against all inclusives, but they tend to get a lot of people getting away to party who drink way too much.

To the OP. Yes, there's seaweed / sargassum, sometimes heavy. Most resorts / beaches do a good job of keeping it cleaned up. Hopefully, you've done your research and are staying at a family friendly resort. Truthfully, I've never gone in the summer, but I expect it's pretty hot. Find ways to stay cool and enjoy your trip. Not sure if it be worth it with kids your age, but there's a Cirque du soleil show, Joya, about half way between Playa and Cancun. If the kids can swim well, there's great snorkeling, mostly out from Cozumel. There are some neat cenotes where you can go swimming and will be cooler temperatures. We also did a cave tour through a series of cenotes. There are a number of water / adventure parks close by that might be a fun day trip: Xplor, Xel-Ha, Xcaret, and others.

Also, they've made serious tech improvements to the arrivals process at the Cancun airport over the past two years and it goes really quickly.
