If that’s your use case, I’d be more focused on the screen and keyboard than the rest of the stats. A mini PC for around $300 is more than capable of doing what you want. But since you’re getting a laptop, I’d get the best screen and keyboard available.
Agreed.
I use a 32" external monitor, probably 90+% of the time. I think I would prefer a matte screen to an OLED because of glare (and, for what I have read, also battery consumption).
When I use the external monitor I typically use a separate keyboard (Microsoft MX Keys Mini). The keyboard and screen are identical on both of the machines I am considering.
