Woah. For all of you worried about your modern gas stoves... I'm happily using and caring for your worst nightmare.
I just had my 88 year old vintage stove (it's not an antique yet - it will be in 12 years...) serviced - all the knobs needed to be cleaned and oiled (and a bunch of other little "cleaning" things - basically it had a Spa Day.) Did some "age related things" like replaced the gas connector (it was 25 years old) installed a gas regulator so the stove is now up to current code, and added a gas shutoff behind the stove (this was a convenience thing and not a code thing). I'm waiting for a new burner grate (one has been broken for decades) and to hopefully have the oven door fixed (one of the hinges is bent - not critical or dangerous - just not right and can be fixed.)
Yes, it has a pilot light that always burns (and lights the burners). Yes, I light the oven with a match or a kitchen lighter.
I'm NOT saying you all shouldn't have concerns about your modern gas stoves. But odds are without a pilot light (and having electronic ignitions) that your modern stove is probably not "leaking" gas into your house. If it is, it's probably the gas connector or the connection points between the wall and your stove.
If you are concerned about burning gas while using the cook top or oven/broiler - get a stove/oven powered by electricity.
If you are worried about the age of the connector or how your stove was installed I'm sure you can start with your gas utility to help you find someone qualified to look at and assess your stove/situation.
